During the lockdown we’ve been trying to create recipes from items we have in the cupboard. Hot dogs is one ingredient all three of my kids love. In an attempt to create a hot dog recipes that isn’t just popping them on buns, we tried this hot dog fried rice. It’s a great of getting a bit of extra veg into the kids without them even realising! Prepare it in pots and pans for glass top stove.
This recipe easily fed the five of us so you might wish to alter the quantities slightly depending on how many you’re cooking for.
Cook the rice according to the instructions. Meanwhile chop the hotdogs and carrots into small pieces. Cook in a small amount of oil until the carrots start to soften.
When the rice is cooked add to the pan with the hot dogs and carrots. Heat and stir for one minute and then add frozen peas. I didn’t weigh the peas, I just I just added them straight from the bag! Heat for a further three minutes.
Crack your eggs into a bowl and mix together with a fork before adding to the pan. Add three tablespoons of soy sauce and continue to heat through for a further three minutes. We used reduced salt soy sauce since it was for the kids but it could work equally well with the regular sauce.
Then simply stir, dish up and serve! Easy!
This hot dog fried rice recipe was a huge success. I love it because it’s so quick and easy to make, and cheap too. The kids loved it too and barely noticed the added veg I sneaked in! It’s a fab cheap and easy meal and perfect for lockdown since all the ingredients we already had in!
