Hot Dog and Spicy Tomato Pasta

Spicy tomato pasta is something I make a lot for the family. I usually use butchers sausages but in the current climate, hot dogs were the perfect replacement. They’re something that is easily kept in the cupboard with a long expiration date and there are some great hot dog recipes to chose from.

This hot dog and spicy tomato pasta is perfect for a quick and easy meal the whole family will love.

Ingredients

  • Pasta – any shape (we used fusilli)
  • Tinned chopped tomatoes
  • Cayenne pepper
  • Garlic
  • Hot Dogs
  • Sweetcorn

Method

Cook the pasta according to the instructions. Meanwhile chop the hot dogs into small slices and add to a pan with a little oil. Cook over a medium heat for approximately three minutes. Add the chopped tomatoes and cayenne pepper and garlic. You can use fresh garlic if you wish but we used garlic granules as we always have those in the cupboard. I used a teaspoon of the garlic and half a teaspoon of cayenne pepper. My husband would probably prefer a little more cayenne pepper as he loves spice but we find this is the perfect amount for the kids. It gives it a kick, without them complaining it’s too spicy. That’s the great thing about this hot dog and spicy tomato pasta recipe, you can adapt it to your own needs.

Heat for approximately five minutes and then add the sweetcorn. Again, we had tinned sweetcorn in the cupboard so popped them in to increase the veg content but they’re entirely optional. It’s one of the few vegetables that all three kids will eat and provides a nice crunch to the dish.

Heat until the pasta is cooked, then drain the pasta and add to the hot dogs and sauce. Simply stir through then serve! Easy, and tasty too!
